HOT MINUTE W/ GABACOOL PROVISIONS

THE PAIRING
We paired MOTO with The Big Tony, our pepperoni pizza, finished with ricotta and a drizzle of MOTO post-bake. The heat and acidity from the hot sauce work really well with the rich, spicy pepperoni, while the ricotta adds a creamy richness that balances everything out. It’s a simple combination, but all three components play off each other perfectly.

Calabrian chili is already something we use and love, so MOTO felt like a really natural fit rather than something we had to force into a dish.

THE SPOT
We made the pizza ourselves at Gabacool Provisions, our mobile pizzeria based in Sonoma County, California. We’re a two-person, chef-owned operation making New York-leaning pizzas at breweries, wineries, parking lots and pop-ups around the Bay Area.

Italian-American food is basically the world Gabacool lives in. Our whole thing is taking the food and culture we grew up around and having a little fun with it while still taking the cooking seriously.

THE BEVERAGE
We paired it with Candlestick Chronicles from Cooperage Brewing Company, a hazy IPA brewed here in Sonoma County. We pop up with Cooperage regularly, so it felt right to include one of our local brewery partners. The juicy, hoppy beer is great alongside the spicy pepperoni and MOTO.

THE SOUNDTRACK
We’ve been listening to “Loud Bark” by Mannequin Pussy a lot lately. It’s loud, a little chaotic and has been stuck in our heads — which feels pretty appropriate for spending most of our lives making pizza in parking lots.

ABOUT GABACOOL PROVISIONS
We’re Jeremy Clemens and Michele Querin, the husband-and-wife team behind Gabacool Provisions in Sonoma County, California. Jeremy is a chef and Michele handles design, branding and operations, and together we run the whole thing as a two-person mobile pizzeria.

We spend an unreasonable amount of our time thinking about pizza, hunting down good food, collaborating with other small businesses and making overly elaborate 90s-inspired graphics for a pizza pop-up. Our unofficial motto is basically: whole pies, good ingredients, questionable parking decisions.
